AUTUMN| RICE WITH VEGGIES, CURRY SAUCE, SEITAN AND PEACH SLICES

I love the combination of sweet & savory.

You can easily switch the ingredients if you want to. Choose some local grown and seasonal veggies or switch the seitan for your favourite meat substitute!

 

RECIPE

. Boil ONE CUP OF RICE as instructed on the package.

. Cut HALF OF A BROCCOLI and HALF OF A CAULIFLOWER into florets.

. Then boil them until they are done. You also steam them if you want.

. Bake SEITAN PIECES in SOME OIL.

. If the seitan is ready, add THREE QUARTERS OF A CUP COCONUT MILK.

. Then add A LOT OF CURRY SPICES, SALT AND PEPPER.

. Let the sauce simmer for a few minutes, until the desired consistency is reached.

. You can also add SOME CURRY PASTE, if you like it more spicy.

. Add SOME PEACH SLICES on top and it’s done!

 

Pretty easy recipe right? And it’s such a nice meal.

You can also make this in advance if you have a busy week.
