I just really love curries, they’re easy to make and such a comfort food.
This combo is one of my favourites. I think broccoli, lentils and curry go very well together.
I used quinoa for this recipe, but you can also eat it with rice.
. Add ONE CUP OF QUINOA and TWO CUPS OF WATER and get the water boiling. When all the water is gone, the quinoa should be ready.
. Steam or boil a BROCCOLI and prepare HALF A CUP OF LENTILS. I usually buy them dry and then boil them for twenty minutes.
. Chop up ONE ONION and ONE CLOVE OF GARLIC. Sauté them in a pan, then add some curry spices.
. Add TWO CANS OF COCONUT MILK to the pan.
. Heat it and let it simmer, until the curry has reached your desired consistency.
