SUMMER| BURRITO BOWL WITH QUINOA

I had some spare tomatoes, who were getting a little soft, so I decided I should do something with them before they went bad. They’re not very good, if they’re getting soft and you eat them raw, so I wanted to prepare a dish with them.

RECIPE

. Bake ONE ONION, TWO CLOVES OF GARLIC and some spices together. I used A CHILI MIX, BLACK and WHITE PEPPER, SALT and SOME BASILICUM and OREGANO.

. Add TEN TOMATOES (without the peel) and ONE AND A HALF CUP OF QUINOA.

*You can keep the peels to make soup*

. Cook until the quinoa is done and the tomatoes are soft.

. Make sure the quinoa and the tomatoes become a smooth substance.

. Drain ONE CAN OF BLACK BEANS.

. Peel ONE AVOCADO and cut it.

. Bake in a pan or put the TORTILLAS/WRAPS in the oven.

. Put everything together and make a burrito! (or burrito bowl).
